Sweet Potato & Black Bean Quesadila

This was sweet potato and black bean quesadila.

Finally I had a chance to finish the leftover filling of my sweet potato and black bean enchiladas that I had kept in the freezer. The quesadila was a perfect weekday dinner: place the filling and Mexican mix cheese between two flour tortillas, pan-heated the both sides until the cheese melts, service it with homemade fresh guacamole. Simple, easy, quick.
And it was so tasty! The filling was still fantastic. I will make it again in near future.
