Banana Bread with Walnut Paste Filling
This was banana bread with walnut paste filling.
I had two ripen bananas and 1/4 cup leftover sour cream. Banana bread was the first thing in my mind. It was another chance to use palm sugar. I thought whether I would like to add walnut or pecan, then I remember I had about half a cup of frozen walnut paste filling that I made for Hungarian Nut and Poppy Seed Rolls. So I filled banana bread with the honey-sweeten nut filling.
I really liked the result! Nutty moist light banana bread. It was technically refined sugar free. Palm sugar is now my friend.
Banana Bread with Walnut Paste Filling
Make 1 loaf
dry ingredients
1 cup all-purpose flower
1/2 cup cake flour
2 tsp baking powder
1/2 tsp baking soda
3 tbs palm sugar
a pinch of salt
wet ingredients
2 bananas
1/4 cup sour cream
1 egg
4 tbs butter, melted
1/2 tsp vanilla extra
2 tsp rum
1/2 cup homemade walnut paste filling
1. In a bowl, whisk all dry ingredients together.
2. In another bowl, mash banana with a folk, mix sour cream, egg, butter, vanilla, rum in.
3. Mix dry ingredients mix into wet ingredients mix, stir gently until just combine.
4. Pour 1/3 of the mix into oven paper-lined or lightly non-stick oil splayed loaf pan. Spread half of walnut paste filling over. Repeat again and finish the rest (1/3) of the mix on top.
5. Bake in the 350 F pre-heated oven, for about 50 mins.
