Chia Seed Banana Chocolate & Vanilla Pudding
These were Chia Seed Banana Chocolate & Vanilla Pudding.
I just bought my first chia Seeds. I was just curious about this "super food" - a great sauce of omega 3 fatty acids, protein, fiber, antioxidants, and calcium. Sounds healthy indeed. One of popular recipes with chia sheeds is pudding. I LOVE pudding. So I combined a few recipes from online and made up mine. Chocolate chia seed pudding and vanilla chia seed pudding layers with unsweetened carob chips, sliced fresh banana and non-fat Greek Yogurt drops. Pudding was made with almond milk, unsweetened cocoa powder for chocolate version, vanilla extra for vanilla version, and a few tea spoon of maple syrup. Healthy indeed.
A few issues here though. One was a big one - pudding wasn't set! Mine was something like tapioca in coconut milk. About 8 hours wasn't long enough? Or the ratio of chia seed to almond milk (1/4 cup : 1 1/2 cup) was wrong? Or chia pudding was supposed to be like this? It wasn't bad actually but I would like pudding to eat, not drink. Add more chia seed, wait for longer and/or puree the pudding in a mixer were potential solutions that I can try.
Another issue was a minor one: Greek yogurt topping. The Dannon's plain low fat was too sour. The local grocery doesn't carry Fage, my favorite Greek yogurt brand, so I thought I would try to taste Dannon's first time. Obviously Greek yogurt tastes quite different between different brands. Anyway Greek yogurt topping wasn't necessary for this dessert. I can skip it from next time. This was just a beginning of my chia seed adventure. I hope J is ready to try more.
