Brisket Fajitas

These were Brisket Fajitas.

Our deliciously smoked brisket leftover from Easter became delicious fajitas! I adapted fajita seasoning from a popular recipe that I found online with some changes like skipping sugar, salt and chicken bouillon cube, reducing corn starch. Sauteed onion and green bell pepper and added the mixed seasoning, chicken broth and  brisket. Brisket was already cooked, so I just quickly heated all together in the pan.
Homemade guacamole, fresh grape tomatoes, lime wedges,... I hadn't thought about cheese until J mentioned it! Thus, when I picked green bell pepper at the grocery store, cheese was out of my mind. Oops! At least there was some shredded mozzarella in the fridge. Gladly J was open-minded as usual, happily adding an Italian twist to Mexican dish.
The fajitas were GREAT! The wonderful smoky flavor from the brisket was a magical ingredient.
