Apricot Custard Muffins
These were apricot custard muffins.
My new baking recipe book, Oven Mitton no Oyatsu na Okashi by Rumi Kojima that I bought in Japan has many recipes I would like to try right away. This was one of them. Airy cakey crumb, silky custard cream made with real vanilla beans, and sweet-sour dried apricot inside and top - I fell in love with the recipe; then I admired the results.
A whole piece of bright apricot on top brought us a big sunshine at our breakfast table. What a lovely day!
