Tofu Hot Sour Soup & Spicy Cucumber

This was tofu hot sour soup and spicy cucumber.

We have been eating rich foods recently. I wanted to have something simple and light. Tofu in soup sounded right. The soup was based on my egg-drop sour soup made with Japanese chicken soup stock, rice vinegar, low-sodium soy sauce, and black & white peppers. I added carrot, celery, Shiitake mushroom, leftover wonton wrappers, and fresh chive along with tofu and egg. I also made quick spicy cucumber as a small salad. One big bowl soup was just a right & light dinner.
