Veggie Chili Mac

This was Veggie Chili Mac.

My first chili mac. I didn't know such a thing exists. We had "not enough for two bowl but ok for two cups" veggie chili leftover from day before. J's suggestion was this chili mac. I didn't have elbow macaroni in hand so I asked J if any other short pasta would be fine. He said no. According to the name "Mac," elbow  macaroni was a must. I took a walk to grocery store. Luckily elbow macaroni was Buy 1, Get 1 Free. I came back home with two boxes of elbows. I tossed boiled macaronis with heated veggie chili, mixed with fresh chopped cilantro, divided it into two bowls, topped them with Mexican cheese mix, and broiled them in the toaster oven for a minute to melt cheese. I enjoyed my new American discovery.
