Chicken Piccata

This was chicken piccata.

I happened to see a picture of Classic Chicken Piccata on Food52. It looked nice although chicken is never my favorite. Actually I usually don't like the flavor from mixing of lemon and butter (or lemon and egg). So, chicken piccata should not be on my table, but I made it because I assumed J would like the lemony chicken with capers.
I discovered the recipe on Food52 was actually exactly a copy of one from Cooks Illustrated. I adjusted the amount of each ingredients for two although I made the sauce more than for two to cover not only the chicken but also the bed of angel hair pasta. The result was surprisingly good - light and bright with tart lemon, pungent capers and fresh parsley. J liked it very much. I knew it!
