Mushroom & Barley Soup
It was a cousin of my mushroom, wild rice and barley soup. No wild rice; more barley. New addition was carrot. More veggie. Why not? Probably a biggest change was no cream. The soup was nicely silky with starch from barley. Cream could mask some of bright earthy flavors melted in the soup. I was right! Without cream, the soup was still wonderful, even better!
