Homemade Chicken Empanadas, again

These were homemade chicken empanadas, again!

Like the last year, I made them for J so that he could snack them while I am gone to Japan. I adapted the same recipe for the filling and made some changes. I reduced smoked paprika and adding diced red bell peppers, which I did last year. Also, I used cilantro instead of parsley because I didn't have fresh parsley but plenty of cilantro. Twelve empanadas are a lot! We'll see if there is any leftover when I come back.
