Apricot Financier

These were apricot financier.

Financier is a small French cake (maybe called cookie?). Almond flour, browned butter, and egg white give the cake the nutty flavor and moist buttery texture.
To make my usual Financier special, I added dried apricot and Cointreau. Sweet bright apricot with a hint of orange flagrance was just like the little sunshine in the little cakes.
