Pork Chops with Vinegar & Peppers

This was pork chops with vinegar and peppers.

I adapted a recipe from Cooks Illustrated although I skipped their brining process because handling 1 cup sugar and 1/2 salt sounded too much. Without brining, my pork chops might be a little tough but it was flavorful with the vinegar & peppers sauce with anchovy. The sauce had a strong vinegar kick. I wondered the traditional recipe of this Italian-American dish usually provides this much of vinegary taste.
