Ground Beef Stuffed Peppers

These were ground beef stuffed peppers.

I made these with various colors of sweet peppers that I bought at a local farmers' market.
I made up fillings with ground beef, onion, carrot, a pack of Japanese hamburgu mix paste, a handful of bread crumbs, a handful of shredded colby & monterey jack cheese and ground black pepper. Simple and easy.
Stuff peppers with the fillings, align in the glass container, pour some chicken broth, splash Worcestershire sauce little bit, add a bay leaf, cover the container with aluminum foil and bake about 40 minutes in the 375 degree oven, uncover, top with shredded mozzarella cheese and bake until the cheese nicely melts, about another 10 minutes.
Delicious! The filling was flavorful and all the peppers were tender and tasty although somehow the pretty purple color was faded after cooked. It was a lovely veggie + meat, less carb meal!
