Smoked Fish & Egg Salad Sandwiches on Home-Baked Pumpernickel Bread

These were smoked fish and egg salad sandwiches on home-baked pumpernickel bread.

For one person, a pair of slices for smoked fish; another pair for egg salad. The leftover bread from the home-corned beef sandwiches was large enough to make eight slices.
Creamy rich avocado was in behalf of cheese this time. I am usually not good at picking a right avocado, but this one was beautiful, soft and ripen perfectly.
It was a lovely sandwich dinner. The two full sandwiches per person made us full but feel good with a lot of fresh vegetables.
