Homemade Sourdough Crumpets, again

These were homemade sourdough crumpets, again!

With sourdough starter that hasn't been fed about a week, the crumpets rose higher than last time, I think. I vigorously mixed the starter with sugar, salt and baking soda. Perhaps that made a difference. This time J made sunny side up eggs to go with. Crumpets with savory eggs were as nice as those with sweet fruit jam and butter spread.
