Rice Noodles with Veggie & Peanut Sauce

This was rice noodles with veggie and peanut sauce.

Actually some pieces of pan-fried herd chicken leftover were also in. For sauce, I partially adapted the recipe of peanut dressing for the cold rice noodle with grilled chicken and peanut sauce from New York Times Cooking. Perhaps I used a little too much peanut butter for two; the sauce was so rich and peanut-y heavy. Perhaps I added a bit too much lime juice too; the dish was pretty much tangy. J didn't say anything during the dinner. He finished up his noodle, so at least it was edible for him. Later I don't remember what we were talking about, but I mentioned this noodle dish. He said it was so sour, but didn't mind peanut butter. Finally I got his review.
