Light Banana Bread

This was light banana bread.

It had a light texture because it was made with only one egg, three tablespoons of melted butter, low-fat yogurt, just four tablespoons of coconut sugar, and mixture of all purpose flour and cake flour. The cake had a dense bottom, though. I used four bananas. They sunk to the bottom.
The cake rose higher during baking; it collapsed when it cooled down. It didn't look pretty, but tasted nice. I added vanilla extra, dark rum and a lot of cinnamon for flavors. The slightly sweet banana bread was great for breakfast and snacks whenever we were a little hungry.
