Bettys Lemon & Raspberry Bites

Lemon and Raspberry Bites were Bettys new addition for this Spring/Summer! "Light lemon and almond frangipane sponge and raspberry jam on a sweet pastry base" sounded like a bakewell tart. However, the little cubes were rather a delicate cake. They were wonderful! 

The top lemony sugar layer might be too much sugar for J although he seemed to like the bites overall because he said we could buy it again. Well done Bettys!
