Butter Basted Chicken Breast Joint on Mushroom Risotto

I often serve our favorite Waitrose Mini Butter Basted Chicken Breast Joint on the fluffy bed of couscous. I served the roasted chicken on polenta once but it wasn't adequate because, unlike couscous, polenta didn't absorb delicious buttery juice from chicken nicely. This time I made a mushroom risotto bed. It worked very well! While couscous is much easier to make, risotto will be another option when I have time and am not lazy.
