Kendal Mint Cake
Kendal Mint Cake was on my "Must Eat" list for our recent Lake District trip and J kindly bought one for me at a gasoline stand near Kendal that we stopped by at. Kendal Mint Cake is a sugar-based bar infused with peppermint oil and originates from Kendal (clearly). It's called cake but doesn't contain either flour or egg. It was rather a block of sugar, but the texture was interestingly soft.
It is said that Kendal Mint Cake was born in 1869 by Joseph Wiper, a confectioner in Kendal. Sugar is a power! As a great energy source, Kendal Mint Cake has been taken to "many early 20th century expeditions, including the first-ever land crossing of the Antarctic led by Sir Ernest Shackleton between 1914-1917" as well as to the successful British Mount Everest Expedition in 1953. Although I don't usually eat a sugar-based candy, it was worth of trying the old time adventurer's favorite. It was extremely sweet but the peppermint flavor was refreshing. Maybe we can take some to a fell hiking with us in the future?
