Applewood Smoked Turkey Enchiladas
This was applewood smoked turkey enchiladas.
The sandwiches weren't enough to use all the leftover turkey up. J had an idea, a good one: turkey enchiladas. I adapted a recipe of chicken enchiladas from Cook's Illustrated and made some changes. I added a green bell pepper in the filling; I didn't simmer but just stir turkey in the sauce since turkey was already cooked; I mixed chipotle pepper in adobo in the sauce. I tasted the sauce and found out it was very spicy for me! J won't mind it. I spread less sauce on the left low, which would be mine.
I also reduced cheese in the filling. Instead I generously sprinkle cheese on the top.
Ta-da!
The result was great! With the strong, rich sauce and a mountain of cheese, I didn't taste the smoky flavor from turkey, but it must have melt into the sauce beautifully and become a part of depth of the sauce flavor. It was a happy ending of turkey!
