Sweet Potato & Apricot Cake
This was sweet potato and apricot cake.
The recipe was by David Lebovitz, which was one of the recipes that I have been interested in trying. I halved the recipe to make just one loaf. I used frozen boiled sweet potato puree that I made from a very fresh sweet potato from a farmer's market. I skipped all white sugar. I replaced brown sugar. I believed sweet potato and white vermouth-soaked dried apricots were sweet, so even major reduction of sugar won't make us miss sweetness. I was right!
The cake was lovely. I was glad that J liked it, too. The cake was light. Sweet potato kept the cake moist. The original recipe decorated their cake with cream cheese frosting. I didn't and I was very happy without the extra to enjoy the maximum delicacy of the cake.
