Christmas Dessert 2018
Christmas is a great opportunity to use my trifle bowl while our theme of this Christmas was "Italy." My solution was Tiramisu trifle. It apparently wasn't only me who thought about such a thing. When I googled "Tiramisu trifle," many images showed up. While many looked like just ordinary tiramisu in glass bowl, a photo by Sainsbury's Magazine caught my eye. That was a kind of swiss cake roll trifle with a Tiramisu twist. I borrowed the idea and made my own version.
My Tiramisu trifle (TT) project has started on Christmas Eve. I baked cocoa sponge cake by following a Japanese recipe that I found online. When I bake a sponge cake, I trust Japanese recipes that promise airy, moist, delicate texture and fine taste, just like one I baked.
I added a couple of tea spoons of expresso coffee and rum in whipped cream for Tiramisu flavor. I also added gelatin in the cream so that the cream in the cake would stay well. I also made custard cream and chilled in the refrigerator.
On Christmas day, first I made two kinds of custard creams: mascarpone and mocha (70% dark chocolate/coffee). I added rum and cream cherry for both. I like boozy tiramisu.
I cut swiss roll cake that looked neat and tasted lovely. I stole the end pieces for quality control. Assembling trifle was tricky. I started with mascarpone custard cream on the bottom. Then, place roll cake around the wall and mocha cream, and repeat.
So far it looked ok. I brushed the cake layers with mixture of espresso coffee, rum and cream sherry.
At this point, I saw the custard cream on the bottom sneaking between cake and glass wall, probably because of all weight of cake and cream layers. Oh-oh. J said it didn't look too bad. All I could do was to trust his words. Piping cream sherry-flavored whipped cream on the top.
Before serving, I dusted the top with cocoa powder. It's a trifle, so the serving style was "Let's dig and scoop it by a big spoon as much as you like!"
While the result of decoration wasn't as good as my original image, it tasted delightful, very close to what I expected. It had Tiramisu flavors. Absolutely creamy, almost like ice cream. After the dessert, we all relaxed, watching a comedy movie, and ready to bed. Merry Christmas 2018!
