Ramen Noodle Soup with Stir-fried Veggies & Boiled Eggs
This was Ramen noodle soup with stir-fried veggies and boiled eggs.
One of several things I brought from Japan was a Ramen kit that contained dried Ramen noodles and concentrated rich "Tonkotsu" soup. Tonkotsu soup is basically made with pork bones and meats, chicken bones and vegetables, simmering total about 6 hours. It doesn't sound feasible for me. With the store-bought Ramen kit, the dinner was ready within 30 minutes!
Although the box of the product suggests chicken balls and sliced porks along with some vegetables, I said bye-bye to chicken and meat. I covered noodles with a lot of veggies - onion, carrot, cabbage, broccoli, Shiitake-mushroom, and bean sprouts. At the last minute, I allowed boiled eggs to join the party according to J's request. The dinner was delicious!
