Veggie Tagine

This was Veggie Tagine.

Cauliflower, carrot, onion, and zucchini were veggies here! Green olives, garlic, lemon zest and juice, toasted almond, raisin, fresh parsley and cilantro were added for flavors and texture. For spices,  I used cumin, coriander, cinnamon, ginger, cayenne and sweet paprika by adapted from Cook's Illustrated's Moroccan Chicken. Served with toasted couscous, it was incredibly tasty. We enjoyed this wonderful true vegan - no meat, no dairy - dish two days. I am sure J enjoyed it and would love more!
