Soboro Don

This was Soboro Don, a Japanese-style comfort dish with cooked ground pork and scramble eggs on rice.

I haven't made it so long time. It's usually made with ground chicken, but I used ground pork in the freezer. Actually the ground pork wasn't enough for two, so I added a medium size onion. I like to match pork with ginger, so I also added a good amount of grated fresh ginger, too. Seasoned with soy sauce, Sake, Mirin and sugar, the pork Soboro was flavorful and tasted great with fluffy eggs. The person who first arranged Soboro and eggs side by side on the rice bed was very wise. Streamed broccoli provided its pretty green color and met our demand on veggie. It was a very satisfying one-bowl dinner!
