J's Country Omelette with Spanish Style Artisan Cooking Chorizo

One of J's Santa wishes was chorizo, fresh one and dried one because I threw away his dried chorizo friend. I wasn't mean. The old chorizo, probably less than half of the original size has been in the refrigerator for a quite long time and didn't look pretty. Simply I conducted my duty as a kitchen police. Apparently my action broke J's heart. So, Santa brought him two packs of fresh chorizo as well as one dried chorizo to cheer him up. Interestingly, it was our first fresh chorizo. At least I don't remember any fresh chorizo we bought in the past. Based on customer reviews, Santa chose Spanish style artisan cooking chorizo by Peregrino, which was made with carefully chosen Spanish ingredients in United States.
We were curious about the cooking sausage. First J made his staple country omelette with it. He used about half of a link, diced. He also added some Cotija cheese and fresh thyme in omelette. The omelette was lovely with the chorizo's great flavor. The chorizo wasn't strong, heavy or greasy like its dried cousin. We have already had a plan to use the rest of cooking chorizo for Paella.
