Mushroom & Barley Soup, Winter 2017-2018

I am glad I had a chance to make my favorite mushroom and barley (sometimes and wild rice) soup again this winter. I wanted to add wild rice, but unfortunately our closest local grocery didn't have wild rice, so I used only barley. It was hearty as usual, good for chilly winter evening. Second day, barley absorbed the soup and the soup looked like mushroom risotto. Still we enjoyed it!
