Kedgeree with Beet-Pickled Eggs

This was Kedgeree with beet-pickled eggs.

Our new favorite rice dish, Kedgeree was dressed up with beautiful purple boiled eggs! We colored the eggs with the leftover brine of rick's picks' phat beets. They were pickled about for 2 days.
Our first beet-pickled eggs turned out very well. They were slightly vinegary, which matched with kedgeree well. The Kedgeree tasted lovely as always. The frozen smoked haddock was kept well in the freezer. It was a great product.
I was so happy to see the purple egg flowers blooming on the Kedgeree bed. It was just what I imagined.
