Spinach, Zucchini & Red Onion Quiche

This was spinach, zucchini and red onion quiche.

I have made spinach quiche as well as zucchini and red onion quiche. This was a cousin of those. The recipe for the tart was from Cook's Illustrated that I followed and liked very much when I baked Kale Quiche. For the filling, two eggs, 1/4 cup of buttermilk leftover, some leftover shredded mozzarella cheese and leftover sliced havarti, about 3/4 of large red onion leftover, 1 small zucchini leftover and a box of frozen spinach.
The result was very cheese-y, veggie-rich satisfying savory tart! Nobody including J knew the quiche's actual mission was to use up things in the refrigerator and it was accomplished successfully.
