Homemade Chicken Fricassée
My first homemade chicken fricassée! Actually I haven't even had chicken fricassee before but have a similar dish. Maybe it was chicken fricassée. The definition of the French classic chicken stew seems fuzzy. When I googled images of the dish, I saw varieties. It looked that chicken, veggie (mushrooms), and white wine-based creamy sauce were commonly shared among them. The recipe I adapted certainly had those three aspects..., well, basically had only them. I found the recipe on the largest Japanese recipe portal, CookPad. It was simple with a short list of ingredients. There was a small change I made. It called for Maitake mushrooms, which is easy to find in Japan but doesn't seem here, England. I used brown mushrooms instead. The dish was easy to make and pretty good with rice. I can add it on our "home bistro" menu.
