Tofu Pad Thai with Waitrose Pad Thai Kit
Homemade Pad Thai dinner sounded good to me, but there were several ingredients I needed to buy, such as rice noodles, fish sauce, crushed peanuts, tamarind paste, palm sugar, and sweet preserved radish. I didn't want to keep a lot of leftovers of those ingredients. First of all, I had no idea if I could find all at a local grocery store. Still I would like to have Pad Thai. With such a conflict and uncertainly in mind, I arrived at a local Waitrose store and happened to find a Pad Thai kit. It contained noodles, sauce, peanuts and water chestnuts for two. It sounded like a short cut and fun. I took a chance.
I added Tofu, bean sprouts, scallions, and an egg and finished with fresh lime juice. The result was surprisingly good. It had strong red chili and garlic flavors. The taste was a bit different from Pad Thai from Thai restaurants that I have ever had. I also have seen water chestnuts in Pad Thai. I wouldn't judge its authenticity; I am not a Pad Thai expert anyway. Overall, the dish was nice and I was happy with it.
