Blueberry Banana Muffins

These were Blueberry Banana Muffins - J's good-morning-breakfast booster.

Generous banana and blueberry, not sugary at all, very moist and tender, plus, Omega-3 from flax seed.

I have heard blueberries are good for eyesight and brain health. Recently I read blueberries could help build strong bone. Go Go blueberry!

Blueberry Banana Muffins
MAKES 12

7 1/2 oz all-purpose flour
1 oz cake flour
1/2 oz flax seed
2 tsp baking powder
1 tsp baking soda
3 tbs butter
1/4 cup cane sugar
3-4 bananas
1/4 cup low-fat yoghurt
1 tsp vanilla extra
1 egg
1 bag frozen blueberry

1. Shift flour, flax seed, baking powder, baking soda together, set aside
2. In a large bowl, cream butter and sugar, mix in egg
3. In a medium bowl, smash bananas with a folk, mix in yoghurt and vanilla extra
4. In creamed butter, mix in flour mixture and banana mixture, gently stir in blueberry
5. Spoon into lightly oiled muffin pans, bake 350 F, 30 min
