This was Summer Peach Cake. I found a recipe for it from July 2011 issue of Cooks Illustrated. How could I disregard butter cake loaded with fresh peaches? Since I had missed a chance to bake it last summer, I was looking forward to the fresh peach season. Yes, Summer has arrived and my dream has come true.
I reduced sugar a lot and butter a bit; the cake was just lovely with "
intense flavor, lush texture" as the magazine described.
I was very happy with the output. Most importantly, J liked it too!
