Matcha Capcakes

This was a little treat - Matcha (Japanese powdered green tea) cupcake. Topping was sweetened Azuki (Japanese red beans).

I made the sponge by mixing fluffy meringue (egg white and sugar), flour and Matcha powder. Trying to be healthy, I didn't add any fat. The texture was kinda dry while the taste was fine. I would stick to non-fat but may add some liquid like soy-milk...there is plenty of room for improvement.
