Tofu Burgers

These were Tofu burgers.

In Japan, pan-fried (sometimes baked or simmered in sauce) hamburger pate, served without buns, called Hamburg, is a very popular dish. This dinner was presented in that manner.

I made two toppings: Negi-Miso, a mixture of scallion, Miso, Sake, Mirin; and Ankake, fresh ginger-Japanese broth sauce. It was good to eat plain too.

Tofu Burgers
MAKES 6-7 pieces

1 pack Tofu drained
1 carrot, finely chopped
1/2 onion finely chopped
handful of dried Shiitake mushroom, soften in water, finely chopped
1 egg
splash of Sake
splash of soy sauce
some ground black pepper
some Panko (Japanese bread crumbs)

1. Wrap Tofu in paper towel, microwave 1-2 min, drain well.
2. Saute carrot, onion, Shiitake until lightly soften.
3. Mix Tofu, sauteed vegetables, and egg; season with Sake, soy sauce, black pepper.
4. If the mixture is too wet to shape pates, add some Panko.
5. Pan-fry pates with a little oil, cook with cover, about 3 min for each side
