J's Mother's Italian Cream Birthday Cake

This was J's mother's Italian cream cake for our birthdays. Huge and marvelous! Did I say that before? Yes, I did back to 2013! She was talking about some changes she made on her Southern family tradition recipe, like toasting coconut and decorating the top of the cake not only with cream but also with nuts. So it's a recipe evolution!
We took a part of the cake back home and enjoyed a slice a couple next days.
It was lovely nutty cake. Yes, the cake was surrounded with generous amount of nuts as they were seen. Inside was filled with sweet cream cheese frosting, tender sponge cake and of course J's mother's LOVE!! It was so delightful. Thank you very much, J's mother!
