Chicken Stew with Red Wine, Tomatoes & Mushrooms
It was my made-up dish. I was looking for a recipe to use carrot, celery and about 1/3 bottle of red wine. I found a potential recipe, but that called for beef. Since I don't approve our local grocery store's quality of beef, chicken would be alternative. I looked for a recipe of chicken dish with carrot, celery and red wine. The combination of chicken and red wine easily reminded me of Coq au Vin, but it won't use carrot and celery and would need something I didn't have in hand like bacon and more red wine. I found some recipes of chicken dish with carrot and red wine, but celery. Doesn't chicken like celery? Interesting. At the end, with ingredients that I would like to use and inspirations by recipes I checked, I created this stew. It had chicken tights, onion, carrot, celery, garlic, mushrooms, canned diced tomato, red wine, low-sodium chicken stock, fresh thyme, fresh rosemary, bay leaf, and black pepper. Served with spätzle, it was absolutely delicious! I think chicken likes celery at least in this way.
