Paella, again

This was Paella, again!

I couldn't believe it has already passed almost two years since our last Paella. I adapted a recipe from Cook's Illustrated with a little change of seafood choice as usual. This time, jumbo shrimps, scallops and soft-shells called "steamers" were in!
It was plenty! We enjoyed the dish three days. We finished seafood in first two days and the third day was mainly rice with some red pepper, chicken and chorizo. Actually rice was the most precious part of Paella. Rice absorbed all delicious juice and flavors from each ingredient. We were very happy with just a bowl of the rice on the last day.
