Golden Delicious Crumble with Homemade Rum Ice Cream

This was golden delicious crumble with homemade rum ice cream.

I found golden delicious apples at our favorite local farm stand. There were other kinds of apples, too, but these apples won my heart! Then, a question was what to do with them.
Golden delicious is many people's choice for apple pie. We just finished the whole sweet potato pie; therefore, probably J won't appreciate another pie so soon. Apple cake was a possibility, but he immediately say no because we will eat a lot of cake-like desserts during the up-coming holiday season. Really? I hope so. Something without cake or crust would be a crumble. I believed J would approve it! I cut two golden delicious apples, tossed them with lemon juice, a little bit of corn starch, coconut sugar, and pinch of cinnamon and salt, covered the glass container with aluminum foil, roasted 20 minutes in the oven at 350F. Apples got slightly tender.
Then, I spread streusel, or crumb topping over the apple. My streusel was made with all-purpose flour, almond flour, butter, coconut sugar, vanilla and a pinch of salt, mixed with fingers.
Baked another 30 minutes and done! While it was being baked, the house smelled so nice!
The final topping was important. I wanted to add special topping on the crumble other than usual whipped cream. It was not summer anymore, but homemade ice cream sounded very nice. I remembered rum-soaked raisins in the refrigerator. I knew J would love a scoop of boozy rum raisin ice cream on warm tender sweet apple and buttery crispy almond crumbs.
I was right!
