J's Scrambled Eggs with Chorizo & Scallion on Sourdough Biscuits

These were J's scrambled eggs with chorizo and scallion on sourdough biscuits.

Instead of his famous country omelet, J made scrambled eggs with our new favorite Spanish chorizo. In fact scrambled egg was J's another famous egg dish. He uses double-boiler to cook eggs gently and carefully. His scrambled egg is airy soft and moist, of course, delicious! For his special eggs, I baked sourdough biscuits. I haven't baked those biscuits for a while. The freshly baked biscuits reminded us how wonderful they are!
J made scrambled egg open sandwiches for himself while I enjoyed my biscuit and egg side by side.
