Petite Honey Butter Cake

These were Petite Honey Butter Cake for my friend whose birthday was the day.

When I saw a Nordic Ware platinum acorn cakelet pan last year, I fell in love instantly. The pan creates adorable mini cakes. This time I covered the acorn heads with chocolate and toasted coconuts/pistachio to make the cake dressed up.

A batch of the acorn pan made 18 pieces and there was still some dough. I got a mini-muffin pan, adding lemon juice and zest in the leftover dough to make different flavor from acorns, which tasted close to Madeleine cake. Topping was white chocolate and colorful Fours: candied violet, dried apricot, dried raisin, dried cranberry. It turned out well!
