Black Bean & Mushroom Enchiladas

These were Black Bean and Mushroom Enchiladas.

Basically mushroom was added in my black bean enchiladas instead of green pepper. Of course, I added one chipotle in adobo sauce. The just one smoky pepper makes a huge difference in terms of flavor and of course spiciness.
Mushroom added meaty earthy taste, which we liked. And, it was pretty spicy (at least for me), which J liked.
