Apple Crumble

This was apple crumble.

I made it to use up all Stayman apples that I still had after I had made Devonshire Apple Dappy. I adapted a recipe from Cook's Illustrated, halved the volume, and made some changes, such as reducing sugar for both topping and apple filling as usual, replacing almond slices with almond meals and adding a little almond extract for topping, and adding some chopped dried apricots in filling. While the apple crumble was till warm, I served it with whipped cream. How delicious! The tart apples were wonderful with light crisp cookie-like topping and soft peaked whipped cream. It was a very refreshing and we quickly finished up a bowl! A whole apple per serving. Really?
