Fluffy Light Blueberry Muffins

This was a fluffy light blueberry muffin.

I adapted an old recipe from Cook's Illustrated and halved the ingredients to make six instead of twelve. As usual, I dramatically reduced the amount of sugar and replaced all of it with coconut sugar which colored the muffins in deep brown. Then I topped them with crystal sugar sprinkles for a enjoyable crunchy sweet bite!
A lot of blueberries inside. A lot.
The muffins were amazingly fluffy. In fact I forgot to halve baking powder, so extra baking powder might have brought the super airy texture. I will make them again with the halved amount of baking powder to see how the texture will change.
