Chicken & Veggie on Rice

This was chicken and veggie on rice.

It was my made-up dish. My mission was to create a concrete meal by using a bunch of celery in the refrigerator and a tiny chicken breast in the freezer without hopping out to grocery store in a cold day. I marinated chicken in garlic, Sake, and cornstarch in a ziplock for a few hours, and pan-fried chicken and veggies - celery of course, carrot, onion and defrosted lama beans, seasoning with soy sauce, Sake, rice vinegar and chicken soup. Chicken was moist and tender. Amazingly the tiny breast became two good bowls, thanks to a lot of veggie and rice! Simple and delicious.
