Ramen @ Home

It was a Ramen day! I used a Ramen kit that I got from a Japanese grocery store in London via online shopping. The kit came with dried ramen noodles and a pack of concentrated Tonkotsu soup. A popular topping for Ramen with Tonkotsu soup is Chashu (Japanese braised pork belly). I thought of making it a bit, but only a couple of slices of Chashu would be served per bowl. Cooking a large block of pork belly for just one meal for only two of us didn't make a sense. My solution was buying a small pack of sliced pre-cooked chicken. Adding chicken in a pork-based ramen soup sounded a bit cheating but the result wasn't too bad, at least I thought. J wasn't totally convinced, though. Well, next time I will try to find a better Chashu alternative.
