Veggie Pad See Ew revisited

This was vegetable Pad See Ew again.

With some unknown reasons, I wanted to taste Pad Thai. I had kept mentioning it to J. We tried to go to a Thai restaurant but hadn't happened. J said why I should make Pad Thai and he could take me to Wegmans for the ingredients. Alright! Then I realized I didn't have some ingredients, which are probably not available at Wegmans, if I would like to adapt a recipe from Cook's Illustrated. To avoid the complication, let's forget about Pad Thai; welcome back to Pad See Ew! This light soy sauce-flavored Thai-ish noodle dish nicely satisfied me. Maybe I just wanted noodles with fish sauce. J thought the dish needed a little more sauce. Ok, I can add extra sauce so next time.
