Classic Strawberry Shortcake

This was classic strawberry shortcake.

Strawberry shortcake is perhaps the most common and popular cake in Japan. Still, it's not this classic style. Japanese strawberry shortcake is an airy yellow sponge cake-based, not biscuit-based like this. I like both. I would love any sweets with whipped cream and strawberries. My homemade biscuits were sweet and buttery.

I was so lucky to meet these winter strawberries that were surprisingly very sweet and flavorful. That was why I wanted to enjoy the strawberries in a special way. They deserved it!

It was almost too cute to eat! Yes, almost. There was an empty plate 5 minutes later.
