Mac & Cheese with Wensleydale Creamery's Cheese


The rest of the four kinds of Wensleydale Creamery's cheese melt into macaroni and cheese. With my usual Cook's Illustrated's Simple Stovetop Macaroni and Cheese recipe, the result was super cheesy creamy mac and cheese! All of the cheeses were nicely merged together while the smokey flavor from the oak-smoked cheese stood out. It wasn't bad anyway. As a side, I made cabbage and apple slaw with honey-lime dressing. It was one of the best sides to serve with frozen mac & cheese by kitchen. My mac and cheese wasn't frozen, but I could use kitchen's ideas were helpful. The slaw was refreshing and interesting. It certainly went well with our special four cheese mac and cheese.
